The stories of La Mère Poulard and Mont-Saint Michel are intimately entwined.

Born in 1852, Annette was about twenty years old when Mont Saint Michel was re-opened to the world after having been an infamous prison since the time of the French Revolution in 1789. It was around that same time that young Annette married the son of the baker on Mont Saint Michel, Victor Poulard, who would faithfully and discretely support her throughout her long lifetime in her passion for two things: cooking and Mont Saint Michel.

On Mont Saint Michel, hospitality has been a tradition for thousands of years: since the Middle Ages, the inhabitants of Mont Saint Michel - the “Montois” - have welcomed pilgrims at their inns, where they could find food and lodging.
It was thus entirely natural that Annette and Victor Poulard, in 1888, would open their inn in the heart of the medieval town, on the “Wonder of the Western World”, in order to welcome pilgrims and gourmet food lovers from round the world.

the famous omelette of Mère Poulard
A recipe become legendary: the famous omelette of Mère Poulard. Jealously guarded formula handed down from generation to generation to delight gourmets around the world. To him who called him the secret, the cook replied innocently facetious:

"Here is the recipe for omelette: I break good eggs in a bowl, I fight well, I put a good piece of butter in the pan, I throw eggs and I move constantly. I am pleased, Mr. if this recipe pleases you. "
